Doritos Taco Bake (Print Version)

Beef and corn layers baked under cheese and crushed Doritos, turning golden and delicious.

# Ingredients:

01 - 1 packet of seasoning for tacos
02 - 1 cup sour cream
03 - 1 teaspoon of garlic, minced
04 - 3 cups of shredded Mexican-style cheese
05 - 1 cup of black beans, optional
06 - ½ yellow onion, chopped
07 - 12 oz bag of frozen corn
08 - 1 pound of lean ground beef
09 - 1 cup Doritos, lightly crushed
10 - 2 cups Doritos, crushed fine
11 - 14.5 oz can of diced petite tomatoes with green chilies, juice included
12 - Optional toppings: avocado slices, lettuce, chopped green onions, tomatoes, sour cream

# Steps:

01 - Set your oven to 350°F (175°C) to preheat. Grease a 9x13 baking dish using nonstick spray.
02 - Smash your Doritos chips by hand or in a gallon-size bag. Keep two cups crushed fine and one cup in larger pieces for the topping.
03 - Brown ground beef with the diced onion in a skillet on medium heat. When cooked, drain off any grease.
04 - Once the beef looks cooked through, toss in the minced garlic and cook for about a minute. Stir in the taco seasoning, bag of corn, canned tomatoes, and your two cups of finely crushed Doritos. You can add black beans if you're using them.
05 - Pull the skillet off the heat. Mix in the sour cream and stir in two cups of cheese until blended.
06 - Move the mixed ingredients to the greased baking dish, smoothing it out evenly. Pop it in the oven for 5 minutes to warm through.
07 - Take the dish out and sprinkle on one cup of the crushed Doritos (the bigger chunks) and the last cup of cheese. Bake again for another 5 minutes till the cheese melts.
08 - Bring the dish out of the oven and serve right away. You can dress it up with sour cream, avocado, lettuce, green onions, and diced tomatoes if you want.
