Preheat oven to 375°F (190°C). Grease a 9x9 inch baking dish and set aside.

Combine the pie crusts and roll them into a large rectangle. Cut into four 7x7-inch squares. Combine and re-roll dough if necessary.

In a small bowl, combine brown sugar, cinnamon, nutmeg, ginger, and allspice. Stir until evenly mixed.

Peel and core each apple.

Place 1 apple in the center of each dough square. Add 1 piece of butter and 1 tablespoon of the spiced sugar mixture into the apple’s center. Pull the corners of the dough up around the apple and pinch edges to seal completely.

Arrange the wrapped apples in the prepared baking dish.

In a large saucepan, melt the sugar over medium-high heat, whisking frequently until fully melted. Stop whisking and cook until it turns a dark amber color. Add the butter and whisk until fully combined. Carefully remove from heat and gradually add the cream while whisking. Stir in vanilla and salt.

Pour the caramel sauce over the apples in the baking dish. Sprinkle any remaining spiced sugar mixture on top. Bake for 50-55 minutes, or until golden and apples are tender.
