Over medium heat, throw the sausage into a big pan. Break it up into small chunks while stirring every now and then. Keep cooking until it's nice and browned, then take it out of the pan and set it aside.

Grab a bowl and give the eggs, milk, salt, and pepper a good whisk until it’s all one smooth mixture.

Using the same pan, toss in a bit of grease like butter or oil, then pour in the egg mixture. Cook on medium-low, stirring here and there, until the eggs turn soft and scrambled. Scoop them out once they’re ready.

Lay each tortilla down flat. Spread the cooked sausage and scrambled eggs over each one. Toss a handful of shredded cheese on top.

Roll each tortilla as tightly as you can to keep the filling from escaping.

In the same pan, add some butter or oil and set it to medium heat. Place each roll-up seam side down and fry it for about 2-3 minutes. Rotate them to get all sides browned and melt that cheese inside.

Cut the wraps into smaller pieces if you’d like, and serve them warm right away.
