Egg Roll in a Bowl (Print Version)

Ground turkey and veggies combine in one flavorful skillet meal, perfect for quick weeknight dinners.

# Ingredients:

01 - 2 tablespoons corn oil
02 - 1 small yellow onion, diced
03 - 1 tablespoon fresh ginger, minced
04 - 3 cloves garlic, minced
05 - 1 pound ground turkey
06 - 1 16-ounce bag coleslaw mix
07 - 1 tablespoon soy sauce
08 - 1/4 cup green onions, chopped
09 - Salt and pepper, to taste

10 - Duck sauce, for serving
11 - Cauliflower rice, for serving

# Steps:

01 - Heat oil in a large skillet over medium heat. Add half of the ginger, half of the garlic, and the diced onion. Sauté until the onion is softened, about 4 minutes.
02 - Add ground turkey to the skillet. Break the turkey into small pieces with a spoon and stir occasionally until fully cooked.
03 - Add the coleslaw mix, the remaining ginger and garlic, and the soy sauce to the skillet with the cooked turkey. Cook while mixing frequently until the cabbage is tender.
04 - Adjust with additional soy sauce if needed. Top with chopped green onions and remove from heat.
05 - Serve over cauliflower rice and add duck sauce if desired.
