Eggs Bacon Quesadillas (Print Version)

Scrambled eggs, bacon, and sausage rolled with cheese and peppers in warm, crispy tortillas for the perfect bite.

# Ingredients:

→ Filling

01 - 2 cups shredded cheese
02 - 1/4 cup whole milk or heavy cream
03 - 1/2 cup diced red pepper
04 - 6 large eggs
05 - 8 slices of thin bacon
06 - 6 sausage links or 1/4 pound ground sausage
07 - 2 diced jalapeños (seeds removed)
08 - 1/2 cup diced onions

→ Tortillas & Cooking

09 - 2 tablespoons unsalted butter
10 - 8 (6-inch) soft flour tortillas
11 - Optional: some pico de gallo

# Steps:

01 - Crack the eggs into a mixing bowl, pour in the milk or cream, and whisk until they look smooth and blended.
02 - Use a large skillet to cook the bacon to your preferred crispiness. Place them onto paper towels to absorb the grease.
03 - Set the pan back to medium heat and cook the sausage until it's fully browned. Drain on a paper towel once done.
04 - In the same skillet, toss in the diced onions and peppers. Stir and cook for 3-4 minutes until softened. Take them out and set aside.
05 - Clean the skillet with paper towels and heat it over low-medium heat. Add a tablespoon of butter, then pour in the whisked eggs. Stir gently and cook until fluffy and set, then set them aside.
06 - Put the skillet on medium heat and butter one side of a tortilla. Place the buttered side down in the skillet, then spread 1/2 cup of shredded cheese, scrambled eggs, bacon pieces, sausage, onions, and peppers. If you like, sprinkle on a bit more cheese before adding the top tortilla.
07 - Butter the side of the second tortilla facing up, then cook the quesadilla for 2-3 minutes. Use a metal spatula to carefully flip it over. Let it cook another 2-3 minutes until the outside is golden and crisp.
08 - Slice the quesadilla into four pieces with a pizza cutter or knife. If you'd like, serve with pico de gallo on the side.

# Notes and Tips:

01 - For freezing: Once quesadillas are cooked and cut, place them on a tray with parchment paper and freeze for 1-2 hours. Then move them to a freezer-safe bag.
02 - Reheating tip: Pop them into a toaster oven until they're hot, or microwave for 30-45 seconds.
