Enchilada Casserole Baked Beef (Print Version)

# Ingredients:

01 - 2 lbs ground beef
02 - 1 can enchilada sauce (28 oz)
03 - 2-3 cups shredded cheese
04 - 1/2 diced onion
05 - Corn tortillas

→ Seasonings

06 - Taco seasoning mix
07 - Garlic powder
08 - Onion powder
09 - Salt and pepper

# Steps:

01 - Cook the ground beef in a pan over medium heat until browned. Drain excess fat and return to low heat. Add diced onions and cook until softened.
02 - Warm the enchilada sauce in a small pot over low heat. Add garlic powder, onion powder, salt, and pepper to taste. For spicier flavor, add chili powder if desired.
03 - Mix taco seasoning and 1/4 cup water into the browned beef and onions. Stir until well combined.
04 - Line a baking dish with foil and spread just enough enchilada sauce to coat the bottom.
05 - Dip each corn tortilla into the enchilada sauce to coat both sides lightly. Layer dipped tortillas in the baking dish to cover the bottom. Add a layer of seasoned beef, shredded cheese, and then another layer of dipped tortillas. Repeat layers, finishing with a top layer of tortillas and cheese. Ensure there are no gaps in the top layer to prevent the meat from drying out.
06 - Cover the baking dish with foil and bake at 350°F (175°C) for 15 minutes. Remove the foil and bake for an additional 5 minutes.
