Warm the enchilada sauce in a small pot over low heat. Add garlic powder, onion powder, salt, and pepper to taste. For spicier flavor, add chili powder if desired.

Mix taco seasoning and 1/4 cup water into the browned beef and onions. Stir until well combined.

Line a baking dish with foil and spread just enough enchilada sauce to coat the bottom.

Dip each corn tortilla into the enchilada sauce to coat both sides lightly. Layer dipped tortillas in the baking dish to cover the bottom. Add a layer of seasoned beef, shredded cheese, and then another layer of dipped tortillas. Repeat layers, finishing with a top layer of tortillas and cheese. Ensure there are no gaps in the top layer to prevent the meat from drying out.

Cover the baking dish with foil and bake at 350°F (175°C) for 15 minutes. Remove the foil and bake for an additional 5 minutes.
