Flaky Pie Crust Cookies (Print Version)

Tender cookies with strawberry jam, layered and dusted with powdered sugar for an easy, fun dessert.

# Ingredients:

01 - 1 box refrigerated pie crusts
02 - 1/3 cup strawberry jam
03 - 1 large egg
04 - 2 tablespoons powdered sugar for dusting

# Steps:

01 - Preheat the oven to 375°F and line a baking sheet with parchment paper.
02 - Roll out both pie crusts on a lightly floured surface.
03 - Cut 12 solid rounds using a scalloped cutter for the bottoms, then cut 12 more using a scalloped cutter with a built-in center cutout for the tops.
04 - Arrange all the cutouts on the prepared baking sheet.
05 - Beat the egg and lightly brush each piece with the egg wash.
06 - Bake for 12–15 minutes or until lightly golden.
07 - Let cookies cool completely on a wire rack.
08 - Dust the cut-out tops with powdered sugar.
09 - Spoon about 1 teaspoon of strawberry jam onto the flat side of each full round. Top with the sugar-dusted cookies to create sandwich cookies.

# Notes and Tips:

01 - If you don’t have a scalloped cookie cutter with a built-in center cutout, use two separate cutters. A piping tip can work in a pinch for the center cutout.
