Spread a thin layer of mayo (if you want) on one side of each piece of bread.

Take two slices of bread and place the mozzarella on top of them. Grab the other slices and place them on top to complete the sandwiches.

In one bowl, mix the eggs and milk with a pinch of salt and pepper. In another, combine the flour and optionally, the panko breadcrumbs, along with some salt and pepper.

Put a piece of parchment paper on a small plate or tray and have it nearby.

Dip a sandwich all over in the egg-milk bowl first, and then roll it in the flour mixture. Move it to the parchment-lined plate when done. Do the same for the other sandwich.

Put the coated sandwiches in the fridge and let them cool off for 20 minutes.

Once the sandwiches are chilled, heat about an inch of oil in a dutch oven or cast iron skillet.

Carefully place each sandwich in the hot oil using a spatula. Cook for around two minutes, then flip and cook the other side for two more minutes until they're golden.

Move the fried sandwiches to a cutting board. Use a serrated knife to make clean cuts. Start slicing just to the center where the cheese is, then flip the sandwich over and cut the opposite side. Serve immediately and enjoy while hot.
