Fudgy Chocolate Brownie Cookies (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 95g (3/4 cup) plain flour
02 - 2 tablespoons cocoa powder
03 - 1 teaspoon baking powder
04 - 1/4 teaspoon salt

→ Wet Ingredients

05 - 225g (1 1/4 cups) dark chocolate, chopped
06 - 56g (1/4 cup) butter
07 - 2 eggs, room temperature
08 - 100g (3/4 cup) caster sugar
09 - 90g (1/2 cup) demerara sugar
10 - 1 teaspoon vanilla

→ Add-ins

11 - 85g (1/2 cup) dark or milk chocolate chips

# Instructions:

01 - Preheat oven to 160°C (320°F) fan or 170°C (338°F) conventional. Line baking tray with parchment.
02 - Melt chopped chocolate and butter over simmering water. Stir in vanilla.
03 - Beat sugars and eggs with electric whisk until light and fluffy.
04 - Sift together flour, cocoa, baking powder, chocolate chips, and salt.
05 - Fold melted chocolate into egg mixture, then gently fold in dry ingredients until just combined.
06 - Scoop onto prepared tray, bake 12-14 minutes until set and crackly on top.
