Naturally Sweet Fudgy Date Brownies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 stick unsalted butter
02 - 4 eggs, at room temperature
03 - 16 Medjool dates, pitted (about 3/4 pound)
04 - 1 teaspoon vanilla extract

→ Dry Ingredients

05 - 1 1/2 cups no sugar added chocolate chips, divided
06 - 1/4 cup all-purpose flour
07 - 1/4 cup cocoa powder
08 - 1/2 teaspoon salt

# Instructions:

01 - Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper, leaving overhang on all sides
02 - In a large microwave-safe bowl, melt 1 cup chocolate chips with butter in 30-second intervals. Whisk until smooth and let cool slightly
03 - Blend eggs and dates in a high-speed blender until smooth, about 1 minute. Date pieces should be very small (sesame seed size)
04 - Pour date-egg mixture into melted chocolate and whisk for 1 minute until well combined. Add vanilla extract
05 - Sift flour, cocoa powder and salt together in a small bowl. Fold gently into chocolate mixture until no flour streaks remain
06 - Fold in remaining chocolate chips, then pour batter into prepared pan and smooth into an even layer
07 - Bake for 20-25 minutes until the top looks set but the middle is still fudgy
08 - Allow to cool for about 30 minutes before slicing into 16 equal squares

01 - Dates replace refined sugar in this recipe, giving a natural caramel flavor
02 - Make sure your eggs are at room temperature for best results
