Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper, leaving overhang on all sides

In a large microwave-safe bowl, melt 1 cup chocolate chips with butter in 30-second intervals. Whisk until smooth and let cool slightly

Blend eggs and dates in a high-speed blender until smooth, about 1 minute. Date pieces should be very small (sesame seed size)

Pour date-egg mixture into melted chocolate and whisk for 1 minute until well combined. Add vanilla extract

Sift flour, cocoa powder and salt together in a small bowl. Fold gently into chocolate mixture until no flour streaks remain

Fold in remaining chocolate chips, then pour batter into prepared pan and smooth into an even layer

Bake for 20-25 minutes until the top looks set but the middle is still fudgy
