Bring a large pot of salted water to a boil. Add baby potatoes and cook until fork-tender, approximately 12 minutes. Drain well.

Preheat a griddle or large skillet over medium heat. Drizzle with olive oil and add cooked potatoes. Using a spatula, gently smash each potato flat. Drizzle additional olive oil on top, then season with salt, black pepper, and garlic powder. Fry and flip until golden brown and crispy on both sides, about 5–8 minutes.

Cut strip steaks into bite-sized cubes. Place steak cubes on the other half of the griddle or in a separate pan over medium-high heat. Season with Montreal steak seasoning to taste. Sear, stirring occasionally, until desired doneness is reached, about 3–5 minutes.

Turn off heat once steak is cooked. Add butter and minced garlic to the steak. Stir until butter melts and garlic is fragrant, coating the steak evenly.

Transfer crispy potatoes to a serving platter. Sprinkle generously with shredded cheddar cheese while hot so it melts. Top with chopped green onions. Serve steak bites alongside or over the potatoes.
