Golden Cheesy Potatoes (Print Version)

Creamy layers of cheddar, potatoes, bacon, and roasted garlic baked to golden perfection with a cheesy crust.

01 - 4-5 medium Yukon Gold potatoes, peeled and thinly sliced
02 - 6 strips of bacon, cut into pieces
03 - 2 bulbs of roasted garlic
04 - 2 tablespoons of unsalted butter (use 4 tablespoons if skipping the bacon)
05 - 1/4 cup plain flour
06 - 2 cups of full-fat milk
07 - 1/2 cup chicken stock
08 - 12 ounces of sharp cheddar, shredded
09 - 6 ounces of sharp white cheddar, shredded
10 - 1/4 teaspoon of sweet paprika
11 - 1 teaspoon fresh rosemary, minced
12 - 1 teaspoon fresh thyme, minced
13 - 1 teaspoon of salt, or adjust to taste
14 - A handful of parsley for decorating

# Steps:

01 - Turn your oven to 400°F (200°C). Trim the tops off the garlic cloves so you can see the inside. Drape with olive oil, cover in foil, and roast for 30-35 minutes until golden and creamy.
02 - Peel and slice the potatoes as thinly as you can. Parboil them in a pot for 8 minutes, then chill them in ice water to stop cooking.
03 - Fry the bacon pieces in a big pan until they're nice and crispy. Take them out and leave them to cool.
04 - Use the bacon drippings in the pan and stir in the butter. Once melted, add flour and mix continuously to form a roux. Let it bubble for 1-2 minutes until slightly golden.
05 - Slowly pour in the milk and chicken broth while whisking non-stop until it thickens. Add mashed roasted garlic, your seasonings (salt, pepper, thyme, rosemary, and paprika), and stir it all together. Toss in both kinds of cheese a little at a time, mixing until smooth and gooey.
06 - Put the potato slices into your baking dish and pour the cheese sauce over them. Make sure every piece is coated. Brush the top flat, and bake it uncovered at 350°F (175°C) for 30 minutes.
07 - Take the dish out of the oven, layer the crispy bacon and mozzarella cheese over the top. Bake again for another 10-15 minutes, or broil it to brown the edges. Garnish with parsley before bringing it to the table.
