Shrimp Cheese Toast (Print Version)

Crispy Parmesan-crusted bread meets melted cheeses and zesty shrimp for a gourmet comfort treat.

# Ingredients:

01 - 2 tablespoons unsalted butter, split into two portions
02 - 1 large garlic clove, finely chopped
03 - 1 tablespoon lemon peel, grated
04 - 1 tablespoon olive oil for cooking
05 - 1 tablespoon fresh lemon juice
06 - 0.25 teaspoon black pepper, freshly ground
07 - 6 ounces peeled, cooked cocktail shrimp (roughly 1.25 cups)
08 - 0.75 cup shredded mozzarella cheese
09 - 0.75 cup shredded Gruyere cheese
10 - 4 slices of sourdough bread
11 - 2 tablespoons Parmesan, finely grated

# Steps:

01 - Use a medium heat to melt the olive oil and 2 tablespoons of butter in a small pan. Toss in the chopped garlic and stir for about a minute until it smells fragrant. Mix in lemon peel and let it cook for another minute.
02 - Warm the shrimp in the buttery mix. Remove from heat, move it to a bowl, splash with lemon juice, and let it cool off.
03 - Shred the Gruyere and mozzarella. Mix both cheeses into the cooled shrimp and sprinkle in the ground black pepper.
04 - Take the slices of bread, and spread soft butter on the outside of each one. Press some Parmesan cheese gently onto the buttery sides. On the non-buttered sides of two slices, add half the shrimp and cheese combo. Cover with the other slices, buttered side facing out.
05 - Set the air fryer to 400°F and select the ROAST or GRILL option. Cook sandwiches for 3 minutes on one side, flip, and cook for another 2 minutes. If you want them extra crispy, add 1–2 more minutes.
06 - In a skillet on medium heat, cook sandwiches until the bottom is golden and crispy. Flip to crisp the other side.
07 - Take the sandwiches out of the pan or fryer. Serve as soon as possible.
