Use a medium heat to melt the olive oil and 2 tablespoons of butter in a small pan. Toss in the chopped garlic and stir for about a minute until it smells fragrant. Mix in lemon peel and let it cook for another minute.

Warm the shrimp in the buttery mix. Remove from heat, move it to a bowl, splash with lemon juice, and let it cool off.

Shred the Gruyere and mozzarella. Mix both cheeses into the cooled shrimp and sprinkle in the ground black pepper.

Take the slices of bread, and spread soft butter on the outside of each one. Press some Parmesan cheese gently onto the buttery sides. On the non-buttered sides of two slices, add half the shrimp and cheese combo. Cover with the other slices, buttered side facing out.

Set the air fryer to 400°F and select the ROAST or GRILL option. Cook sandwiches for 3 minutes on one side, flip, and cook for another 2 minutes. If you want them extra crispy, add 1–2 more minutes.

In a skillet on medium heat, cook sandwiches until the bottom is golden and crispy. Flip to crisp the other side.

Take the sandwiches out of the pan or fryer. Serve as soon as possible.
