Grilled Cheese Eggs (Print Version)

Toasted sourdough sandwiches packed with melty cheese, seasoned eggs, and savory sausage make mornings delicious.

# Ingredients:

01 - 8 slices of sourdough bread
02 - ½ pound of breakfast sausage, ground
03 - 6 big eggs, whisked
04 - 4 tablespoons of softened butter (split in half)
05 - 8 slices of Colby-Jack cheese

# Steps:

01 - Heat up a large non-stick skillet and cook the ground sausage until it's not pink anymore. Break it up as it cooks. Move the sausage to a medium bowl lined with a paper towel, then set it aside. Use a paper towel to clean the skillet.
02 - Add 2 tablespoons of butter to the same skillet and melt over medium-high heat. Pour in the whisked eggs. Once the eggs start to firm up, gently stir them to make scrambled eggs. Keep going until there's barely any liquid left. Take the pan off the heat.
03 - Take out the paper towel from under the sausage, leaving it in the bowl. Add the scrambled eggs to the bowl and lightly stir them together. Wipe out the skillet again and warm it over medium heat.
04 - Spread butter on one side of each bread slice. Put one slice, buttered side down, in the hot skillet. Add one slice of Colby-Jack cheese on top, followed by about ½ cup of the sausage-egg mix. Place another cheese slice on top of that, then finish with another bread slice, buttered side up.
05 - Toast the bottom bread slice until the color turns golden, about 3-4 minutes. Flip the sandwich carefully and brown the other side until golden, too.
06 - Put the sandwich on a cutting board and slice it in half if you'd like. Do the same with the rest of the bread, cheese, and sausage-egg mix. Serve right away.
