Fried Egg Grilled Cheese (Print-Friendly Version)

Fried eggs, melted cheese, and crispy toast come together for a tasty sandwich that’s great for breakfast.

01 - 4 large eggs
02 - 4 slices thick Texas toast
03 - 2 slices Pepper Jack cheese
04 - 2 slices Colby Jack cheese
05 - Butter, for spreading and frying
06 - Salt, as you like it
07 - Black pepper, freshly ground, to taste

# How to Make It:

01 - Cover the frying pan with a lid. Flip the sandwich once to cook both sides until the cheese is gooey and the bread is toasted, then repeat with the other sandwich.
02 - Butter one side of each slice of Texas toast and set them aside for later.
03 - In a frying pan, melt a bit of butter on low heat. Cook the eggs until the yolks are just how you like them. Add salt and freshly ground black pepper before taking them out of the pan.
04 - Start with a slice of bread on the pan, buttered side down, and add a slice of Colby Jack on top. Place two fried eggs over that, then add a slice of Pepper Jack cheese. Finally, put another slice of bread on top, buttered side up.

01 - Cooking at a low temperature gives the best results. It helps the bread get crispy without burning while letting the cheese melt nicely.
02 - Using Texas toast gives a satisfying bite, but you can swap in any thick bread you fancy.
