Heat a large skillet that doesn’t stick. Place the ground sausage in it and cook until there’s no pink left, stirring and breaking it apart as it cooks. Place the cooked sausage onto a bowl lined with a paper towel to drain, then wipe the pan clean.

Put 2 tablespoons of butter in the same pan and let it melt on medium-high. Pour in the eggs and let them set a bit. Stir occasionally to break apart the eggs until there’s just a little wetness left. Take the skillet off the heat.

Discard the paper towel from the bowl with the sausage, letting the sausage stay inside. Add the scrambled eggs into the same bowl. Mix everything together gently. Give the skillet another wipe and heat it up on medium.

Spread butter on one side of each bread slice. Put one slice, buttered side down, on the skillet. Lay down one cheese slice on the bread, spoon on about half a cup of the egg-sausage mix, layer another cheese slice, and top it off with another buttered bread slice, butter side facing up.

Let the sandwich cook until the bread turns a golden brown, which should take about 3-4 minutes. Flip it and let the other side turn golden brown too.

Take the hot sandwich out of the skillet and place it on a cutting board. Slice it in half if you like. Repeat this process with the remaining ingredients and enjoy while warm.
