01 -
Crack the eggs into a medium-sized bowl, sprinkle in the salt and pepper, then whisk everything together.
02 -
Pop a big skillet onto the stove, toss in 2 tablespoons of butter, and heat it on medium.
03 -
Grab the last tablespoon of butter and smear it over one side of each bread slice. Leave them to the side for now.
04 -
Pour the egg mixture into the hot skillet and tilt it around so the eggs cover the whole pan.
05 -
Lay the bread slices on the eggs, buttered side facing up, so the edges of each slice meet.
06 -
Keep the eggs cooking until they firm up and there’s no more runny part left—this takes about 5-7 minutes.
07 -
Flip the eggs and bread over as one piece. Make sure those eggs are cooked through before flipping.
08 -
On one slice of bread, add the cheddar cheese and stack the ham on top. Fold any extra egg over the ham for neatness.
09 -
Take the other bread slice and fold it over to cover the fillings, creating your sandwich.
10 -
Flip the whole sandwich, press it a little, and cook another 2-3 minutes until the cheese oozes and the sandwich is golden brown. Serve while warm.
