Healthy Breakfast Oat Cookies (Print Version)

Oat-based breakfast cookies loaded with fruit, nut butter, and chocolate chips for a nourishing treat.

# Ingredients:

→ Base Ingredients

01 - 1/2 cup rolled oats
02 - scant 1/2 cup applesauce or mashed banana
03 - 1/4 cup almond or cashew butter or allergy-friendly substitute

→ Flavorings

04 - 1/2 tsp pure vanilla extract
05 - 1/16 tsp salt

→ Mix-Ins

06 - 2-3 tbsp mini chocolate chips or sugar-free chocolate chips
07 - 2 1/2 tbsp freeze-dried raspberries or 2 tbsp dried fruit or more chocolate chips
08 - optional 2 tbsp sugar or pinch stevia
09 - optional add-ins, such as chia seeds or shredded coconut

# Steps:

01 - Preheat the oven to 350°F (175°C).
02 - Mash the applesauce or banana with the nut butter until smooth.
03 - Stir in all other ingredients until well-combined.
04 - Shape the mixture into cookies using a mini cookie scoop or by hand.
05 - Place cookies on a greased cookie sheet and bake for about 15 minutes.
06 - Let cookies cool for 10 minutes before removing them from the sheet.

# Notes and Tips:

01 - For a healthier taste, omit added sweetener entirely, especially when using bananas.
02 - If a dessert-like taste is desired, add extra sweetener as needed, starting with the listed amount.
03 - Using liquid sweeteners? Reduce the applesauce or banana accordingly.
