No-Bake Key Lime Pie Bars (Print Version)

# Ingredients:

→ Cookie Crust

01 - 6 pitted dates
02 - 3/4 cup cashews
03 - 1/2 cup almond flour
04 - 1/4 teaspoon cinnamon
05 - 1 teaspoon vanilla extract
06 - 1/2 teaspoon sea salt

→ Key Lime Filling

07 - 1 1/4 cup whole cashews
08 - 1/4 cup full fat coconut milk
09 - 1/4 - 1/2 cup lime juice, plus more to taste
10 - 1 tablespoon lime zest
11 - 1/4 cup maple syrup, plus more to taste
12 - 1 teaspoon vanilla extract
13 - 2 tablespoons coconut oil

# Instructions:

01 - Soak 1 1/4 cup of cashews in water overnight for the key lime pie filling.
02 - Pulse crust ingredients in food processor until sticky dough forms. Press into parchment-lined 8x8 pan. Refrigerate while making filling.
03 - Blend soaked cashews, lime juice, zest, maple syrup, coconut oil, coconut milk, and vanilla until smooth. Adjust sweetness and tartness to taste.
04 - Pour filling over crust. Freeze overnight until solid.
05 - Slice into 9 or 16 pieces. Top with extra lime zest.
