Sausage Casserole with Veggies (Print Version)

Sausage, beans, and veggies mingle in tomato sauce for a comforting and flavorful main course.

# Ingredients:

01 - 1 lb Italian sausage or bratwurst, whole
02 - 1 tablespoon olive oil
03 - 1 large onion, sliced
04 - 2 cloves garlic, minced
05 - 3 large carrots, sliced
06 - 1 bell pepper, sliced
07 - 1 can diced tomatoes, 14.5 oz
08 - 1 can pinto beans, 15 oz, drained and rinsed
09 - 1 can chili with beans (Hormels)
10 - 1 cup beef broth
11 - 1 tablespoon tomato paste
12 - 1 teaspoon dried thyme
13 - 1 teaspoon dried oregano
14 - 1 teaspoon salt
15 - ½ teaspoon pepper
16 - Fresh parsley, chopped for garnish

# Steps:

01 - Heat olive oil in a large pot over medium heat. Brown the whole sausages on all sides until golden, then remove from the pot and set aside.
02 - Add sliced onion, minced garlic, carrots, and bell pepper to the pot. Sauté for about 5 minutes, until vegetables start to soften.
03 - Stir in diced tomatoes, pinto beans, chili beans, beef broth, tomato paste, thyme, oregano, salt, and pepper.
04 - Return the whole sausages to the pot, nestling them into the mixture. Bring to a simmer, then reduce heat to low.
05 - Cover and cook for about 30-40 minutes, stirring occasionally, until the sausages are cooked through and vegetables are tender.
06 - Taste and adjust seasoning if needed. Garnish with fresh chopped parsley before serving.
