Sweet & Spicy Chicken Bowls (Print Version)

# Ingredients:

→ Protein & Sauce

01 - 2 chicken breasts, diced
02 - 1/4 cup honey
03 - 2 tbsp chipotle peppers in adobo sauce, minced
04 - 2 tbsp olive oil

→ Bowl Components

05 - 3 cups cooked rice (white, brown, or jasmine)
06 - 1 red bell pepper, diced
07 - 1 cup corn kernels
08 - 1 cup black beans, rinsed and drained
09 - 1 avocado, diced

→ Garnish

10 - 1/4 cup fresh cilantro, chopped
11 - Juice of 1 lime
12 - Salt and pepper to taste

# Instructions:

01 - Heat 1 tbsp olive oil in skillet. Cook diced chicken with salt and pepper until browned, 6-8 minutes. Remove.
02 - Add remaining oil, honey, and chipotle peppers to skillet. Simmer 2-3 minutes until thickened.
03 - Return chicken to skillet, toss in sauce until coated. Cook 2 more minutes.
04 - Divide rice among bowls. Top with chicken, vegetables, beans, avocado, and cilantro.
05 - Squeeze lime juice over bowls and serve immediately.
