Pour the combined ingredients into an ice cream maker. Follow the manufacturer's guidelines and churn for at least 2 hours until it's softly set.

Toss in the sugar, vanilla, root beer extract, and a pinch of kosher salt. Turn the mixer up to medium and blend for 3–5 minutes to make sure the sugar's all dissolved.

Grab a big mixing bowl and mix the heavy cream with the whole milk. Blend it with a hand or stand mixer on low until it's just combined.

If you want soft serve, dig in right away. Otherwise, put it in a covered container and freeze for a minimum of 2 hours for a firmer texture.
