# Ingredients:

01 - 1 pound dried spaghetti, such as DeCecco
02 - 1/3 cup good olive oil
03 - 8 large garlic cloves, cut into thin slivers

04 - Kosher salt
05 - 1/2 teaspoon crushed red pepper flakes
06 - 1/2 cup minced fresh parsley
07 - 1 cup freshly grated Parmesan cheese, plus extra for serving

# Instructions:

01 - Boil water, add 2 teaspoons salt and pasta. Cook according to package directions. Reserve 1 1/2 cups pasta water before draining.
02 - Heat olive oil in a large sauté pan over medium heat. Cook garlic for 2 minutes until lightly browned at edges. Add red pepper flakes and cook 30 seconds more.
03 - Add reserved pasta water to garlic oil mixture and bring to boil. Reduce heat, add 1 teaspoon salt, and simmer about 5 minutes until reduced by 1/3.
04 - Add drained pasta to garlic sauce. Remove from heat and stir in Parmesan and parsley.
05 - Let pasta rest 5 minutes for sauce absorption. Season to taste and serve warm with extra Parmesan.
