Instant Pot Stuffed Peppers (Print Version)

# Ingredients:

→ Stuffing

01 - 1 lb ground beef
02 - 1 small white onion, diced
03 - 1 small tomato, diced
04 - 5 cloves garlic, minced
05 - 1 tbsp tomato paste
06 - 1 tsp paprika
07 - 1 tsp oregano
08 - 1 tsp ground cumin
09 - 1 tsp garlic powder
10 - 1/2 tsp salt
11 - 1/2 tsp black pepper
12 - 1/4 tsp crushed red pepper flakes
13 - 1 tbsp Worcestershire sauce
14 - 1 cup basmati rice, cooked
15 - 2 tbsp fresh parsley, chopped

→ Bell Peppers

16 - 5 bell peppers
17 - 1 cup water

→ For Topping

18 - 5 tbsp Bolognese sauce
19 - Shredded mozzarella
20 - Chopped fresh parsley

# Instructions:

01 - Combine all of the stuffing ingredients in a large bowl.
02 - Cut off the tops of the bell peppers, remove seeds and veins, and wash thoroughly. Stuff each pepper with the prepared mixture, ensuring it is packed tightly.
03 - Place the trivet inside the Instant Pot and arrange the stuffed peppers on it. Add 1 cup of water into the pot without letting it touch the peppers. Seal the lid, set the pressure to high, and cook for 7 minutes. Allow natural release for 7 minutes, then manually release the remaining pressure. Remove peppers using the trivet handles.
04 - Preheat the oven broiler. Add 1 tbsp of Bolognese sauce on top of each stuffed pepper, sprinkle with shredded mozzarella, and broil for 2-3 minutes until cheese melts. Garnish with chopped fresh parsley before serving.

# Notes:

01 - You can pre-cook the ground beef in a skillet before mixing it with other ingredients, although it will cook fully in the Instant Pot.
