Preheat the oven to 180°C (160°C fan forced) / 350°F. Line a large baking sheet with baking paper.

Beat together the butter and icing sugar using a stand mixer with a paddle attachment or an electric handheld beater.

Add the vanilla extract to the mixture and mix through.

In a separate bowl, whisk together the plain flour, cornflour, and salt.

Add the dry ingredients to the butter mixture in three parts, gently mixing between each addition until just incorporated.

Use a cookie scoop (approximately 1 tablespoon) to portion out dough, then roll into balls.

Roll each ball in granulated sugar if desired and place on the prepared baking sheet.

Use your thumb to press a deep dent slowly into each cookie and fill it with lemon curd.

Bake the cookies for 10 minutes, until the edges are just starting to brown. Cool on the tray for 10 minutes, then transfer to a wire rack to cool completely.
