# Ingredients:

01 - 200 g unsalted butter, softened
02 - 70 g icing sugar (powdered sugar)
03 - 1 teaspoon vanilla extract
04 - 225 g plain flour (all-purpose flour)
05 - 45 g cornflour (US cornstarch)
06 - ¼ teaspoon salt
07 - ⅓ cup lemon curd
08 - Granulated sugar, for rolling (optional)

# Instructions:

01 - Preheat the oven to 180°C (160°C fan forced) / 350°F. Line a large baking sheet with baking paper.
02 - Beat together the butter and icing sugar using a stand mixer with a paddle attachment or an electric handheld beater.
03 - Add the vanilla extract to the mixture and mix through.
04 - In a separate bowl, whisk together the plain flour, cornflour, and salt.
05 - Add the dry ingredients to the butter mixture in three parts, gently mixing between each addition until just incorporated.
06 - Use a cookie scoop (approximately 1 tablespoon) to portion out dough, then roll into balls.
07 - Roll each ball in granulated sugar if desired and place on the prepared baking sheet.
08 - Use your thumb to press a deep dent slowly into each cookie and fill it with lemon curd.
09 - Bake the cookies for 10 minutes, until the edges are just starting to brown. Cool on the tray for 10 minutes, then transfer to a wire rack to cool completely.
