I discovered these mango cookies during a summer when I had way too many mangoes ripening on my counter at once. Standing in my kitchen, staring at that pile of fruit, I wondered if I could transform them into something beyond the usual smoothies and salsas. After experimenting with different recipes, these soft, cakey cookies emerged as the winner - capturing that tropical sweetness in a portable treat.

Last week, my neighbor's kids actually chose these over chocolate chip cookies. Sometimes the best recipes are the ones that introduce people to unexpected flavor combinations.

Essential Ingredients

  • Ripe Mangoes: The sweeter and more fragrant, the better
  • Butter: Creates that perfect tender texture
  • Mix of Sugars: Both white and brown for depth of flavor
  • Simple Pantry Staples: Just the basics you likely already have
  • Powdered Sugar Glaze: For that bakery-worthy finish

Creating Your Cookies

Begin by beating your butter and sugars until light and fluffy.
This isn't just mixing - it's creating tiny air pockets that give your cookies their tender texture.
The Gentle Mix:
Add your dry ingredients carefully, mixing just until combined. Overmixing is the enemy of tender cookies.
Mango Magic:
Fold in those mango chunks with a light touch. You want them to stay intact so each bite gets a burst of tropical flavor.
The Chill Time:
Don't skip the refrigeration step - it helps the dough firm up and prevents excessive spreading during baking.

Through countless summer gatherings and afternoon snacks, these mango cookies have become my signature warm-weather treat. They prove that sometimes the best recipes come from trying to solve the simple problem of too much fruit.

Frequently Asked Questions

→ Can I use frozen mango?
Yes, frozen mango works well. There's no need to thaw it first - add the frozen chunks directly to the dough.
→ Why do I need to chill the dough?
Chilling helps prevent the cookies from spreading too much during baking and enhances their flavor.
→ Can I make these without the glaze?
Absolutely! The cookies are delicious with or without the glaze, though it adds a nice touch of sweetness.
→ What's the best way to dice mango?
Cut along both sides of the pit, score the flesh in a grid pattern, then cut the cubes off the skin. Aim for 1/2-inch pieces.
→ How do I know when the cookies are done?
They should spring back when gently poked with a finger and have slightly golden edges but still be soft in the center.

Ingredients

01 2 1/2 cups (300g) all-purpose flour
02 1 1/2 tsp baking powder
03 3/4 cup (170g) salted butter, softened
04 2/3 cup (150g) granulated sugar
05 1/3 cup (75g) brown sugar, packed
06 1 egg, at room temperature
07 1 tsp vanilla extract
08 1/4 cup (60ml) milk
09 2 cups (320g) diced fresh or frozen mango (about 2 fruits)

→ Glaze (optional)

10 1 cup powdered sugar
11 1-2 tbsp milk (can substitute mango juice)
12 1/2 tsp vanilla extract

Instructions

Step 01

Place the butter, sugar, and vanilla extract into a large mixing bowl. With a handheld mixer or a stand mixer fitted with the paddle attachment, beat on high speed until creamy, for 2 to 3 minutes.

Step 02

Add the egg and pour in the milk. Mix on low speed until incorporated. Occasionally, scrape down the sides and bottom of the bowl.

Step 03

With the mixer running on low, stir in the flour and baking powder. Mix until just combined, and you no longer see streaks of flour. Be careful not to overmix. Batter will be creamy, thick, and sticky.

Step 04

With a spatula or large spoon, gently fold the mango chunks into the cookie dough. Work carefully so the fruit pieces remain intact and don't squish.

Step 05

Cover the mixing bowl tightly with plastic wrap and chill the dough in the fridge for 30 minutes to an hour (and up to 2 days).

Step 06

Adjust a baking rack in the center of the oven and preheat to 350°F (180°C). Line 2 baking sheets with parchment paper.

Step 07

Take the dough out of the fridge. Scoop portions of dough, 1.5 tablespoons each, and place them 3 inches apart on the prepared baking sheets.

Step 08

Bake the mango cookies for 14 to 16 minutes or until a cookie springs back when gently poked with your finger.

Step 09

Remove the cookies from the oven and let cool on the baking sheet for 10 minutes. Then transfer them onto a wire rack to cool completely.

Step 10

In a small mixing bowl, whisk the powdered sugar, vanilla extract, and milk (or mango juice if using) until smooth. Add more powdered sugar to thicken or more milk to thin if needed.

Step 11

Drizzle the glaze over the cookies and let set before serving or storing.

Notes

  1. Store glazed cookies covered or in an airtight container
  2. Will last for 2 days at room temperature
  3. Can be refrigerated up to 1 week
  4. Use mango juice instead of milk in the glaze for more mango flavor
