Margarita Lime Cake Bars (Print Version)

Soft, zesty lime bars with tequila cream cheese filling and a sweet-citrusy glaze on a buttery cake base.

# Ingredients:

→ Crust

01 - 1 box Yellow Cake Mix
02 - ½ cup Unsalted Butter, melted
03 - 1 Egg, room temperature
04 - 2 tsp Lime Zest, from 1 whole lime

→ Filling

05 - 8 oz Cream Cheese, softened
06 - 2 ½ cups Powdered Sugar
07 - 2 Eggs, room temperature
08 - 3 oz Tequila
09 - 2 oz Margarita Mix
10 - 1 tsp Vanilla Extract
11 - 2 tsp Lime Zest

→ Garnish

12 - ¼ cup Powdered Sugar
13 - 2 tsp Lime Zest
14 - 2 tsp Margarita Salt

# Steps:

01 - Preheat the oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper. Spray the baking dish with non-stick baking spray first, place the parchment paper on top, and spray again over the parchment paper.
02 - In the bowl of a stand mixer, combine all crust ingredients. Mix on medium to high speed until the mixture forms a ball.
03 - Press the crust batter evenly into the bottom of the prepared baking dish. Set aside.
04 - In a medium-sized mixing bowl, combine all filling ingredients. Use an electric mixer to mix until the filling is smooth and creamy.
05 - Pour the filling over the prepared crust in the baking dish. Bake for 40-45 minutes or until the edges turn light golden brown.
06 - Remove the baking dish from the oven and let the margarita bars cool for 1 hour. Garnish with powdered sugar, margarita salt, and additional lime zest.
