Mexican Pizzas Dinner (Print Version)

Crisp tortilla stacks loaded with beef, beans, and melty cheese make a perfect blend for midweek dinners.

# Ingredients:

→ Protein & Spices

01 - 1/4 tsp ground cayenne
02 - 2 tsp ground chili powder
03 - 1 chopped onion
04 - 1 tsp dried cumin
05 - 1 lb of ground beef
06 - 1 tbsp garlic, freshly minced
07 - 1/2 tsp black pepper
08 - 1/2 tsp fine salt
09 - 1 tsp dried cilantro

10 - 1 can of smooth refried beans
11 - Vegetable oil for frying
12 - 16 small, soft flour tortillas
13 - Chopped green onions for topping
14 - 2 cups of shredded Colby Jack cheese
15 - Fresh diced tomatoes
16 - Bottle of taco sauce

# Steps:

01 - In a big skillet over medium heat, cook the beef until browned. Toss in the chopped onion and stir it around. When the meat's done, pour out the grease.
02 - Mix the cooked beef with salt, pepper, chili powder, cumin, cilantro, and cayenne. Throw in the garlic and give it a good stir.
03 - In a hot skillet, pour in enough oil to cover the base. Cook each tortilla for 1-2 minutes per side until they're nice and golden. Pat them dry with paper towels.
04 - Heat up the refried beans so they're super easy to spread.
05 - Take one crispy tortilla and spread on some beans. Add some seasoned beef and sprinkle on cheese. Top it with a second tortilla. Cover the top with taco sauce and more cheese.
06 - Pop the layered tortillas into a 200°C (400°F) oven for 10 minutes until the cheese melts.
07 - Add diced tomatoes and green onions on top. Serve while it's nice and warm.
