In a big skillet over medium heat, cook the beef until browned. Toss in the chopped onion and stir it around. When the meat's done, pour out the grease.

Mix the cooked beef with salt, pepper, chili powder, cumin, cilantro, and cayenne. Throw in the garlic and give it a good stir.

In a hot skillet, pour in enough oil to cover the base. Cook each tortilla for 1-2 minutes per side until they're nice and golden. Pat them dry with paper towels.

Heat up the refried beans so they're super easy to spread.

Take one crispy tortilla and spread on some beans. Add some seasoned beef and sprinkle on cheese. Top it with a second tortilla. Cover the top with taco sauce and more cheese.

Pop the layered tortillas into a 200°C (400°F) oven for 10 minutes until the cheese melts.

Add diced tomatoes and green onions on top. Serve while it's nice and warm.
