Cadbury Mini Eggs Cheesecake (Print Version)

# Ingredients:

→ Cheesecake Filling

01 - 16 oz cream cheese, softened
02 - 3/4 cup granulated sugar
03 - 2 eggs
04 - 1 tsp vanilla extract

→ Graham Cracker Crust

05 - 1 cup graham crackers, crushed
06 - 1 tbsp sugar
07 - 3 tbsp butter, melted

→ Ganache

08 - 8 oz semi-sweet chocolate
09 - 1 cup heavy cream

→ Toppings

10 - 1 cup shredded coconut, toasted
11 - 1 cup Cadbury Mini Eggs

# Instructions:

01 - Preheat oven to 350 degrees. Process graham crackers into crumbs. Mix crumbs with sugar and melted butter. Press a tablespoon into the bottom of each cheesecake pan cup.
02 - Mix cream cheese and sugar together in a large bowl or stand mixer. Add eggs and vanilla; mix until well combined.
03 - Pour cheesecake mixture into the pan. Bake for 13-15 minutes. Turn off oven, leave door slightly open, and allow to cool for 5 minutes. Remove and cool completely on wire rack.
04 - Prepare chocolate ganache (melt chocolate with heated heavy cream).
05 - Top cheesecakes with ganache, toasted coconut and Cadbury Mini Eggs. Refrigerate until ready to serve.
