Mongolian Ground Beef Noodles (Print Version)

Ground beef and noodles mingle in a savory, sweet Mongolian-inspired sauce for a delicious, weeknight meal.

# Ingredients:

01 - 1 lb ground beef (substitutes: ground turkey, chicken, or pork)
02 - 12 oz linguine pasta (alternatives: spaghetti or fettuccine)
03 - 2 cups reserved pasta water
04 - 4-5 garlic cloves, minced
05 - 1 tsp ginger paste or 1 tsp dried ginger
06 - 1/4 cup soy sauce
07 - 1/4 cup brown sugar
08 - 1 pinch red pepper flakes (optional for slight spice)
09 - 3 tbsp hoisin sauce (possible substitute: BBQ sauce)
10 - 1/2 tsp ground black pepper
11 - 1 tbsp cornstarch
12 - 2 tbsp cold water
13 - 2-3 green onions, sliced (optional garnish)
14 - 1-2 tsp sesame seeds (optional garnish)

# Steps:

01 - Boil pasta in salted water and cook to al dente as per package instructions. Reserve 2 cups of pasta water before draining.
02 - In a skillet over medium heat, brown the ground beef with minced garlic. Drain excess grease if necessary.
03 - Stir in ginger, soy sauce, brown sugar, red pepper flakes, hoisin sauce, and black pepper. Mix well.
04 - Mix cornstarch with cold water and stir into the skillet. Simmer for a few minutes until the sauce thickens.
05 - Add 1 cup of reserved pasta water and the cooked pasta to the skillet. Stir thoroughly to combine. Adjust thickness by adding up to 1/2 cup more pasta water if needed.
06 - Garnish with sliced green onions and sesame seeds if desired. Serve hot and enjoy.
