Low Carb Mozzarella Onion Rings (Print Version)

# Ingredients:

→ Base

01 - 2 large onions, sliced into 1/2 inch rings
02 - 1 cup mozzarella cheese sticks, cut to fit rings

→ Coating

03 - 2 cups almond flour
04 - 1 tablespoon garlic powder
05 - 1 tablespoon paprika
06 - 1 teaspoon salt
07 - 1/2 teaspoon black pepper

→ Egg Wash

08 - 2 large eggs, beaten
09 - 1/4 cup milk (or almond milk for low carb)

# Instructions:

01 - Preheat oven to 400°F (200°C). Line baking sheet with parchment paper. Separate onion slices into rings.
02 - Select matching onion ring pairs and insert mozzarella sticks between them, pressing to secure.
03 - Mix almond flour with seasonings in one bowl. Whisk eggs and milk in another bowl.
04 - Dip each mozzarella-filled ring in egg mixture, then coat with almond flour mixture.
05 - Place on lined baking sheet. Bake 15-20 minutes until golden and cheese is melted. Cool briefly before serving.
