Quick vegetarian Asian dish (Print Version)

01 - 1 tbsp oil
02 - 170 grams mushrooms (sliced)
03 - 75 grams onions (sliced)
04 - 1/2 tbsp garlic (chopped)
05 - 1 tbsp sesame oil
06 - 1 tbsp hoisin sauce
07 - 1 tbsp sriracha sauce (or any other hot sauce)
08 - 1/2 tbsp dark soy sauce
09 - 1 tbsp rice vinegar
10 - 2 packs maggi or ramen noodles (uncooked & discard the spice pack)
11 - 3 cups water
12 - salt
13 - pepper
14 - 1/4 cup spring onions
15 - 1 tbsp toasted sesame seeds

# Instructions:

01 - Heat the oil in a medium-sized pan over medium heat. Add the chopped garlic and sliced onions, and sauté for a few minutes until the onions become translucent and the garlic is fragrant but not browned.
02 - Add the sesame oil and sliced mushrooms to the pan. Cook, stirring occasionally, until the mushrooms turn a light golden brown color and begin to release their moisture.
03 - Pour in the sriracha sauce, rice vinegar, dark soy sauce, and hoisin sauce. Season with salt and pepper to taste. Cook for about 2 minutes on medium heat, stirring to coat the mushrooms evenly, until they become nicely caramelized.
04 - Add the uncooked noodles (remember to discard the spice packets) to the pan, followed by 3 cups of water. Increase the heat to high and cook, stirring occasionally to prevent the noodles from sticking together, until the noodles are tender and most of the liquid has been absorbed.
05 - Stir in the chopped spring onions and cook for an additional minute to slightly wilt them while maintaining their fresh green color.
06 - Transfer the noodles to serving bowls, making sure to distribute the mushrooms and sauce evenly. Sprinkle with toasted sesame seeds for a nutty finish and extra texture.

01 - This recipe is naturally vegetarian and can be made vegan by ensuring the noodles don't contain egg.
02 - You can use any variety of mushrooms - button, cremini, shiitake, or a mix for more complex flavor.
