No Bake Coconut Balls (Print Version)

Tender coconut balls, gently sweetened and chilled for a quick tropical dessert or snack.

# Ingredients:

01 - 1 1/2 cups unsweetened shredded coconut
02 - 3 tablespoons pure maple syrup or honey or agave
03 - 3 tablespoons coconut oil
04 - 1/4 teaspoon pure vanilla extract
05 - 1/8 teaspoon salt

# Steps:

01 - Combine all ingredients in a blender or food processor until well mixed. Avoid mixing by hand as it may cause the mixture to crumble.
02 - Roll the mixture into small balls using your hands. Coconut oil will make your hands slightly oily but this is beneficial for soft skin.
03 - Roll the balls in additional shredded coconut if desired for extra texture.
04 - Place the balls on a parchment or wax-lined plate and refrigerate or freeze until firm.
05 - Once hardened, dip the balls in melted chocolate if desired, and allow the coating to set.
06 - Refrigerate or freeze any leftovers to maintain freshness.

01 - Coconut oil can leave your hands slightly oily when rolling the balls, but it is great for skin.
