In a large skillet (big enough to fit all pasta and has a lid), cook sausage over medium heat for about 5 minutes until browned. Remove to a paper towel lined plate, keeping the grease in the pan.

In the same skillet, sauté garlic in the leftover sausage grease for about a minute.

Add chicken broth, diced tomatoes, heavy cream, and cajun seasoning. Stir in dry pasta, cover with lid, and simmer on LOW for about 14 minutes.

Once pasta is fully cooked, add back the cooked sausage and stir in shredded cheddar cheese until melted.
