One Pot Creamy Cajun Sausage Pasta (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 (13oz) pack cajun andouille sausage, cut into coins
02 - 8 ounces dry bowtie pasta (½ pound or approximately 2 cups)
03 - 2 cups shredded cheddar cheese

→ Sauce Base

04 - 1 tablespoon chopped garlic
05 - 1 (14.5oz) can chicken broth (about 2 cups)
06 - ½ cup heavy cream
07 - 1 (10oz) can Rotel diced tomatoes and chilies
08 - 1 teaspoon cajun seasoning

# Instructions:

01 - In a large skillet (big enough to fit all pasta and has a lid), cook sausage over medium heat for about 5 minutes until browned. Remove to a paper towel lined plate, keeping the grease in the pan.
02 - In the same skillet, sauté garlic in the leftover sausage grease for about a minute.
03 - Add chicken broth, diced tomatoes, heavy cream, and cajun seasoning. Stir in dry pasta, cover with lid, and simmer on LOW for about 14 minutes.
04 - Once pasta is fully cooked, add back the cooked sausage and stir in shredded cheddar cheese until melted.

01 - Check cajun seasoning's salt content before adding - some brands are very salty
02 - Can customize with vegetables like mushrooms, broccoli, onions, or bell peppers
03 - For less spicy version, use mild smoked sausage and mild diced tomatoes
