Take a small bowl and mix together the Sweet Baby Ray's BBQ sauce and orange marmalade until smooth. Put it aside for later.

Heat a large skillet (12 inches) on medium-high flame, adding 2 tablespoons of olive oil. Once the oil warms up, toss in half of the chicken chunks. Avoid crowding the pan so that the chicken browns nicely. Cook for about 7-9 minutes until the pieces are golden and fully done. Move them to a plate and set them aside.

Drizzle the remaining 1 tablespoon of olive oil into the skillet. Then, throw in the rest of the chicken, cooking and browning it for an additional 7-9 minutes.

Take the cooked chicken and all of its juices and return this to the pan. Pour in the orange sauce mixture, turning the heat to medium. Give it a good stir every now and then so it doesn't stick or burn. Let it cook for about 15 minutes, allowing the sauce to thicken up and cling to the chicken.

Once the sauce is thick and glossy, take it off the heat and serve right away.
