Orange Chicken Bites (Print Version)

Golden chicken with zesty orange glaze, great over rice or noodles for a homemade twist.

# Ingredients:

01 - 2 pounds of boneless, skinless chicken breast, diced into 1 ½ inch pieces
02 - ¾ cup of Sweet Baby Ray's Original BBQ sauce
03 - 18 ounces of orange marmalade

→ For Cooking

04 - 3 tablespoons of olive oil

# Steps:

01 - Take a small bowl and mix together the Sweet Baby Ray's BBQ sauce and orange marmalade until smooth. Put it aside for later.
02 - Heat a large skillet (12 inches) on medium-high flame, adding 2 tablespoons of olive oil. Once the oil warms up, toss in half of the chicken chunks. Avoid crowding the pan so that the chicken browns nicely. Cook for about 7-9 minutes until the pieces are golden and fully done. Move them to a plate and set them aside.
03 - Drizzle the remaining 1 tablespoon of olive oil into the skillet. Then, throw in the rest of the chicken, cooking and browning it for an additional 7-9 minutes.
04 - Take the cooked chicken and all of its juices and return this to the pan. Pour in the orange sauce mixture, turning the heat to medium. Give it a good stir every now and then so it doesn't stick or burn. Let it cook for about 15 minutes, allowing the sauce to thicken up and cling to the chicken.
05 - Once the sauce is thick and glossy, take it off the heat and serve right away.

# Notes and Tips:

01 - Sweet Baby Ray's BBQ sauce adds a smoky, tangy kick, but feel free to use another kind based on your liking.
02 - Cook some rice or sides ahead of time or while the chicken is cooking since this dish comes together quickly.
03 - You'll end up with a little leftover sauce that's perfect for topping rice. If you want more, just double up the sauce ingredients.
04 - If your skillet is on the smaller side, cook the chicken in three separate batches to give it room to brown.
