Orange Chicken Bites (Print Version)

01 - 2 pounds chicken breast, boneless and skinless, chopped into 1 ½-inch chunks
02 - ¾ cup of Sweet Baby Ray’s Original BBQ sauce
03 - 18 ounces of orange marmalade

04 - 3 tablespoons of olive oil

# Steps:

01 - Grab a small bowl, toss in the orange marmalade and barbecue sauce, and stir until smooth. Leave it nearby.
02 - Fire up a large skillet over medium-high heat, adding 2 tablespoons of olive oil. Once it’s shimmering, cook half the chicken chunks. Space them out so they brown properly, about 7 to 9 minutes. When done, move them to a plate for now.
03 - Pour the last tablespoon of oil into the same pan. Add the remaining chicken pieces, cooking and browning them for another 7 to 9 minutes.
04 - Put the cooked chicken and its juices back into the skillet. Drizzle in the orange sauce mixture and turn the heat to medium. Stir often to avoid scorching and cook until the sauce thickens and clings to the chicken, about 15 minutes.
05 - When the sauce is nice and thick, turn off the heat. Plate it up and enjoy immediately.
