Preheat oven to 175°C. Grease a 33x23 cm rectangular baking pan with non-stick spray and set aside.

In a large bowl, combine cake mix, water, vegetable oil, eggs, and vanilla extract. Beat on medium speed for 2 minutes until smooth.

Pour batter into prepared baking pan. Bake for 26-32 minutes or until a toothpick inserted in the centre comes out clean.

Remove cake from oven. Immediately poke uniform holes across the surface using the handle of a wooden spoon or a skewer.

In a medium bowl, dissolve orange gelatin powder in boiling water, stirring until fully dissolved. Add chilled orange soda and mix gently.

Slowly pour gelatin mixture evenly over cake, ensuring liquid seeps into all holes. Cover and refrigerate for 1-2 hours.

Once chilled, spread whipped topping evenly over cake surface. If desired, scatter orange sprinkles on top.

Refrigerate cake for at least 2 additional hours before serving. Just prior to serving, garnish with drained mandarin oranges if preferred.
