Soft poke cake infused with orange soda and Jello, topped with cool whipped cream and citrusy garnishes.

# Ingredients You'll Need:

→ Cake Base

01 - 425 g white cake mix
02 - 120 ml vegetable oil
03 - 240 ml water
04 - 3 large eggs
05 - 5 ml vanilla extract

→ Gelatin Mixture

06 - 180 ml boiling water
07 - 85 g orange-flavoured gelatin powder
08 - 355 ml orange soda, chilled

→ Topping

09 - 225 g whipped topping
10 - Orange sprinkles, to taste (optional)
11 - 1 can (approx. 300 g) mandarin orange segments, drained (optional)

# How to Make It:

01 - Preheat oven to 175°C. Grease a 33x23 cm rectangular baking pan with non-stick spray and set aside.
02 - In a large bowl, combine cake mix, water, vegetable oil, eggs, and vanilla extract. Beat on medium speed for 2 minutes until smooth.
03 - Pour batter into prepared baking pan. Bake for 26-32 minutes or until a toothpick inserted in the centre comes out clean.
04 - Remove cake from oven. Immediately poke uniform holes across the surface using the handle of a wooden spoon or a skewer.
05 - In a medium bowl, dissolve orange gelatin powder in boiling water, stirring until fully dissolved. Add chilled orange soda and mix gently.
06 - Slowly pour gelatin mixture evenly over cake, ensuring liquid seeps into all holes. Cover and refrigerate for 1-2 hours.
07 - Once chilled, spread whipped topping evenly over cake surface. If desired, scatter orange sprinkles on top.
08 - Refrigerate cake for at least 2 additional hours before serving. Just prior to serving, garnish with drained mandarin oranges if preferred.

# Extra Information:

01 - For best results, ensure the cake is fully cooled before adding gelatin mixture to prevent excess crumbling.
02 - Chilling the cake allows the gelatin layer to set and enhances flavour absorption.
