On medium-high heat, brown the sausages in a big skillet until they're done and no pink remains. Move them to a plate with paper towels to soak up any grease. Keep these aside.

In a big bowl, sift together the flour, sugar, baking powder, and salt.

In a smaller bowl, whisk milk, egg, vanilla extract, melted butter, and maple syrup until smooth.

Make a dip in the center of the flour mix and pour in the wet ingredients. Stir everything together until all lumps are gone.

Heat your griddle or frying pan on medium and lightly coat it with non-stick spray. Dip each sausage patty into the pancake batter until fully coated.

Place each batter-covered sausage on the hot pan. Cook until bubbles form on top, flip, then cook the other side until nicely golden. Keep repeating until all sausages are done. Enjoy with some syrup and butter while warm.
