Pizza Enchiladas (Print Version)

# Ingredients:

01 - 1 lb lean ground beef
02 - 1 cup diced yellow onion
03 - 1 medium green bell pepper, diced
04 - 3 oz pepperoni, chopped
05 - 1 tablespoon chopped garlic
06 - 1/3 cup pizza sauce
07 - 1 tablespoon Italian seasoning
08 - 1 cup ricotta cheese
09 - 1 cup mozzarella cheese
10 - 1/3 cup crumbled bacon
11 - 8 large flour tortillas

12 - 2 cups pizza sauce
13 - 2 1/2 cups shredded mozzarella cheese
14 - 3 oz pepperoni slices
15 - 1/4 cup crumbled bacon

# Steps:

01 - Preheat the oven to 375°F (190°C).
02 - Add the lean ground beef to a large skillet over medium-high heat. Crumble the beef as it cooks.
03 - Once the ground beef is fully browned, add diced onions, bell peppers, and chopped pepperoni to the skillet. Stir and cook until vegetables are softened.
04 - Mix in the chopped garlic, then stir well and cook for an additional 2 minutes.
05 - Remove the skillet from the heat. Stir in pizza sauce, Italian seasoning, ricotta cheese, shredded mozzarella, and crumbled bacon until fully combined.
06 - Spread out the flour tortillas. Add a scoop of the ground beef mixture down the center of each tortilla.
07 - Spray a baking sheet with cooking spray, then roll up the tortillas and place them on the baking sheet.
08 - Pour pizza sauce over the rolled tortillas. Sprinkle shredded mozzarella, pepperoni slices, and crumbled bacon on top.
09 - Place the baking sheet into the preheated oven and bake for 20–25 minutes, or until the cheese is fully melted and slightly browned on the edges.
10 - Remove enchiladas from the oven, serve immediately, and enjoy!
