Sausage Tater Tot Breakfast (Print-Friendly Version)

Tater tots, eggs, cheese, and sausage come together in a yummy breakfast casserole that everyone enjoys.

01 - 1 bag frozen tater tots (30 to 32 ounces)
02 - 2 pounds hot breakfast sausage
03 - 1/2 cup shredded mozzarella cheese
04 - 1 and 1/2 cups shredded cheddar cheese

→ Egg Custard

05 - 8 large eggs
06 - 1/2 teaspoon ground black pepper
07 - 1/4 teaspoon onion powder
08 - 2 cups whole milk
09 - 1/4 teaspoon garlic powder
10 - 1 teaspoon salt

# How to Make It:

01 - Lightly spray a 9×13-inch baking dish and set the oven to 350°F.
02 - Cook sausage in a 10-inch skillet over medium heat till it's brown and no longer pink. Use a meat masher to break apart clumps. Make sure to drain off any extra fat.
03 - In a large bowl, mix the cooked sausage, frozen tater tots, shredded cheddar, and mozzarella. Toss everything together until it's all well mixed, then put it in the baking dish.
04 - In another bowl, whisk eggs, whole milk, salt, black pepper, garlic powder, and onion powder until it’s smooth.
05 - Pour the egg mixture over the tater tot and sausage mixture in the baking dish. If you're prepping ahead, cover it and pop it in the fridge or freezer.
06 - Bake uncovered right in the middle of the preheated oven for 60 to 70 minutes, until the egg is set and the top's nice and golden. Let it rest for a bit before digging in.

01 - To get the best texture, keep the tater tots frozen until you mix everything. You can also make this ahead and store it in the fridge or freeze it before baking.
