Lightly spray a 9×13-inch baking dish and set the oven to 350°F.

Cook sausage in a 10-inch skillet over medium heat till it's brown and no longer pink. Use a meat masher to break apart clumps. Make sure to drain off any extra fat.

In a large bowl, mix the cooked sausage, frozen tater tots, shredded cheddar, and mozzarella. Toss everything together until it's all well mixed, then put it in the baking dish.

In another bowl, whisk eggs, whole milk, salt, black pepper, garlic powder, and onion powder until it’s smooth.

Pour the egg mixture over the tater tot and sausage mixture in the baking dish. If you're prepping ahead, cover it and pop it in the fridge or freezer.

Bake uncovered right in the middle of the preheated oven for 60 to 70 minutes, until the egg is set and the top's nice and golden. Let it rest for a bit before digging in.
