Preheat your oven to 350°F (175°C).

In a skillet, heat olive oil over medium heat, add garlic and sauté until fragrant. Add the chopped spinach and cook until wilted. Remove from heat.

In a mixing bowl, combine ricotta cheese, half of the mozzarella, half of the Parmesan, salt, pepper, and red pepper flakes if using.

Stir in the cooked spinach and shrimp into the cheese mixture until well combined.

Transfer the mixture to a greased casserole dish.

Top with remaining mozzarella, Parmesan, and sprinkle breadcrumbs evenly on top.

Bake for 25-30 minutes until bubbly and golden brown on top.
