Smoked Salmon Pasta Salad (Print Version)

# Ingredients:

01 - 1 cup uncooked orzo
02 - 2 mini cucumbers, chopped (or 1/2 English cucumber)
03 - 2 tablespoons red onion, chopped
04 - 2 tablespoons capers, drained
05 - 6 ounces sliced smoked salmon, torn into bite-size pieces

→ Dressing

06 - 2 heaping tablespoons mayonnaise
07 - 1 heaping tablespoon sour cream or plain Greek yogurt
08 - 1/2 teaspoon Dijon mustard
09 - 1/2 tablespoon olive oil
10 - 1 tablespoon lemon juice
11 - Zest of 1 lemon
12 - 1/8 teaspoon garlic powder
13 - 1 tablespoon fresh dill, chopped
14 - Salt and pepper to taste

# Instructions:

01 - Boil a salted pot of water for the orzo and cook it al dente according to package instructions. When it's done, rinse it with cool water and drain it thoroughly, then add it to a large bowl.
02 - In a small bowl, combine mayonnaise, sour cream or Greek yogurt, Dijon mustard, olive oil, lemon juice, lemon zest, garlic powder, and chopped dill. Mix until smooth and set aside.
03 - Add the chopped cucumber, red onion, capers, and smoked salmon to the large bowl with the orzo. Pour the dressing over the ingredients and toss together until evenly coated.
04 - Season with salt and pepper to taste. Serve the salad immediately or chill it in the refrigerator for a while before serving. This salad is best served cold.
