Smothered Chicken (Print Version)

# Ingredients:

01 - 1⁄2 cup all-purpose flour.
02 - 1 teaspoon paprika.
03 - 1 teaspoon garlic powder.
04 - 1 teaspoon onion powder.
05 - 1 teaspoon black pepper.
06 - 1⁄2 teaspoon cayenne pepper.
07 - 1⁄2 teaspoon dried thyme.
08 - 1⁄2 teaspoon salt.
09 - 3 pounds chicken thighs and legs, bone-in with skin.
10 - 1⁄2 cup vegetable oil.
11 - 1 large onion, sliced into half rings.
12 - 4 cloves garlic, minced.
13 - 2 cups chicken broth.
14 - 1⁄2 cup heavy cream.
15 - 2 tablespoons butter.
16 - Fresh parsley for garnish.

# Instructions:

01 - Mix flour with paprika, garlic powder, onion powder, black pepper, cayenne, thyme, and salt. Reserve 2 tablespoons.
02 - Pat chicken dry and dredge in seasoned flour, shaking off excess.
03 - Heat oil in large skillet over medium-high. Fry chicken until golden, 3-4 minutes per side. Remove to plate.
04 - Pour off all but 2 tablespoons oil. Cook onions over medium-low until caramelized, about 15 minutes. Add garlic, cook 1 minute.
05 - Add reserved flour to onions, cook 1-2 minutes. Slowly add broth, scraping pan bottom. Stir in cream.
06 - Return chicken to skillet. Simmer covered on low 30-40 minutes until tender. Add butter to gravy and adjust seasoning.

01 - Pat chicken very dry before flouring.
02 - Don't overcrowd pan when frying.
03 - Adjust gravy thickness as needed.
