Cut each cheddar slice in half so you have four pieces. Put one half-slice of cheese on each bread piece. On two of the cheese-covered slices, add two turkey slices each.

Lay all the sourdough pieces flat. Spread ½ tablespoon of honey mustard on the top of every slice of bread evenly.

Heat a large skillet to medium. Add the sandwiches to the skillet. Toast one side for 3 to 4 minutes, then carefully flip them to toast the other side for another 3 to 4 minutes until the bread's golden and the cheese has melted.

Spread ½ tablespoon of softened butter on the outer sides of each slice of bread, covering all surfaces well.

Evenly layer tomato slices and 25 grams of baby spinach on each slice of bread that has turkey on it.

Put two strips of bacon on top of the remaining cheese-covered bread. Close up the sandwiches, with the bacon looking down onto the vegetable-topped ones, cheese facing inward.

Move the sandwiches to plates and dig in right away while they're hot.
