Cut the sirloin into equal 1-inch cubes. Generously add salt and ground black pepper for seasoning.

Take the steak out of the fridge. Let it sit at room temperature for about 30 minutes before you start cooking.

In a thick skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. When the skillet's hot, add half the steak pieces in a single layer, making sure not to overcrowd. Sear for around 2 minutes without touching them, then flip and sear for another 2 minutes for medium doneness. Move the seared steak to a plate and repeat with the other half.

Lower the heat to medium-low. Add the rest of the butter and the chopped garlic into the skillet. Stir continuously for 1 to 2 minutes until the garlic's fragrant and turns lightly golden, but don't let it burn.

Put the steak and any juices back into the pan. Toss everything in the garlic butter sauce until it's well coated. Serve hot, with the chopped parsley on top.
