Strawberry Bread with Cinnamon (Print Version)

# Ingredients:

01 - 2¼ cups fresh strawberries, hulled and chopped
02 - 2 cups all-purpose flour
03 - ½ cup white sugar
04 - ¼ cup brown sugar
05 - ½ teaspoon cinnamon
06 - ½ teaspoon salt
07 - 1 teaspoon baking soda
08 - ¼ teaspoon baking powder
09 - 2 eggs
10 - ½ cup vegetable oil
11 - 1 teaspoon vanilla extract

→ Strawberry Butter

12 - ½ cup unsalted butter, softened to room temperature
13 - 2 tablespoons powdered sugar
14 - ¼ cup fresh strawberries, hulled and finely chopped

# Steps:

01 - Preheat oven to 350°F (180°C). Grease and flour a 9x5 inch loaf pan.
02 - Sprinkle 2¼ cups chopped strawberries lightly with a little bit of the measured sugar and toss to coat; set aside.
03 - In a medium bowl, whisk together the flour, white sugar, brown sugar, cinnamon, salt, baking soda, and baking powder.
04 - In a large bowl, beat the eggs. Add the vegetable oil and vanilla extract, stirring until well blended.
05 - Stir in the strawberries that you set aside into the wet mixture.
06 - Add the dry ingredients to the wet ingredients in three parts, stirring just until combined after each addition. Do not overmix.
07 - Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
08 - Using a mixer, whip the butter until creamy and light. Beat in powdered sugar until light and fluffy, then fold in ¼ cup chopped strawberries.
