# Ingredients:

01 - 2 cups graham cracker crumbs

04 - 24 ounces full-fat cream cheese, softened to room temperature
05 - 1 cup powdered sugar
06 - 1/4 cup sour cream
07 - 1 tablespoon freshly squeezed lemon juice
08 - 1 teaspoon vanilla extract
09 - 1 1/4 cups heavy whipping cream

10 - 1 1/2 cups strawberries
11 - 1/4 cup granulated sugar
12 - 1 tablespoon freshly squeezed lemon juice

→ Strawberry Crunch

13 - 23 golden Oreo cookies
14 - 3 ounces strawberry Jell-O
15 - 4 tablespoons unsalted butter, melted

→ Garnish

16 - 1 cup heavy whipping cream
17 - Fresh strawberries

# Steps:

01 - Line the bottom and sides of a springform pan with parchment paper. In a medium-sized bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom and sides of the prepared pan. Chill while preparing the filling.
02 - In a large bowl, beat cream cheese and powdered sugar on medium speed until smooth. Add sour cream, lemon juice, and vanilla extract. Beat until combined. In a separate bowl, beat whipping cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture. Spread the filling over the crust, smooth the top, and refrigerate for 6 hours or overnight.
03 - In a medium saucepan, combine strawberries, sugar, and lemon juice. Heat over medium heat until boiling, stirring occasionally. Once thickened and strawberries are soft, mash with a potato masher or blend for a smoother texture. Optionally, strain through a sieve. Cool and store in the fridge.
04 - Crush Oreo cookies and mix with strawberry Jell-O powder and melted butter until combined. Set aside for topping.
05 - Spread the strawberry sauce over the chilled cheesecake. Generously sprinkle with strawberry crunch topping. Decorate with whipped topping and fresh strawberries. Serve chilled.
