Preheat the oven to 180C/350F. Line an 8 x 8-inch pan with parchment paper and set aside.

In a large mixing bowl, combine the oats, banana, peanut butter, and vanilla extract. Mix until fully incorporated. Fold in the strawberries.

Transfer the batter to the lined pan and spread out evenly. Optionally top with additional strawberries.

Bake for 20-25 minutes, or until golden on the edges and a skewer inserted into the center comes out clean.

Allow the bars to cool in the pan for at least 10 minutes, then transfer to a wire rack to cool completely before serving.
