Strawberry Oatmeal Bars (Print Version)

# Ingredients:

01 - 2 cups rolled oats, gluten-free if needed
02 - 1/2 cup peanut butter or any nut/seed butter of choice
03 - 2 large bananas, mashed
04 - 1/2 teaspoon vanilla extract
05 - 1/4 cup strawberries, chopped

# Instructions:

01 - Preheat the oven to 180C/350F. Line an 8 x 8-inch pan with parchment paper and set aside.
02 - In a large mixing bowl, combine the oats, banana, peanut butter, and vanilla extract. Mix until fully incorporated. Fold in the strawberries.
03 - Transfer the batter to the lined pan and spread out evenly. Optionally top with additional strawberries.
04 - Bake for 20-25 minutes, or until golden on the edges and a skewer inserted into the center comes out clean.
05 - Allow the bars to cool in the pan for at least 10 minutes, then transfer to a wire rack to cool completely before serving.

# Notes:

01 - Bars can be stored in the refrigerator in an airtight container for up to a week.
02 - To freeze, place bars in a freezer-safe container for up to 6 months. Thaw overnight in the refrigerator.
03 - To reheat, microwave for 10-15 seconds if desired for a softer texture.
