Fresh Strawberry Tiramisu (Print Version)

# Ingredients:

→ Strawberry Layer

01 - 3 cups fresh strawberries, roughly chopped
02 - 1/3 cup granulated sugar
03 - 21 ounces strawberry pie filling

→ Mascarpone Layer

04 - 2 cups heavy whipping cream
05 - 2 teaspoons vanilla extract
06 - 3/4 cup powdered sugar, sifted
07 - 6 tablespoons instant pudding mix (cheesecake, white chocolate, vanilla or lemon)
08 - 16 ounces mascarpone cheese

→ Assembly

09 - 12 ounces ladyfingers

→ Optional Garnishes

10 - Sliced strawberries
11 - Whipped cream
12 - Powdered sugar

# Instructions:

01 - Combine strawberries and sugar, let sit 10 minutes. Smash gently with fork, then stir in pie filling.
02 - Beat cream and vanilla until frothy. Add powdered sugar and pudding mix, beat to stiff peaks. Beat in mascarpone in two additions until smooth.
03 - Dip ladyfingers in strawberry mixture and layer in sprayed 9-inch dish. Top with half strawberry mixture, then half mascarpone mixture. Repeat layers.
04 - Cover with plastic wrap and refrigerate at least 6 hours or overnight.
05 - Top with optional garnishes, cut into squares and serve.

01 - Can be made 2-3 days ahead
02 - Best enjoyed within 2 days
03 - Store in refrigerator up to 3 days
04 - Not recommended for freezing
