Street Corn Pasta Salad (Print-Friendly Version)

# Ingredients You'll Need:

→ Salad Base

01 - 5 ears fresh corn on the cob, husks and silks removed
02 - 450 grams rotini pasta
03 - 1 large jalapeno, finely chopped
04 - 1 small red onion, finely chopped
05 - 60 millilitres unsalted butter, melted
06 - 150 grams queso fresco, crumbled
07 - 15 grams chopped fresh parsley or cilantro
08 - 12 grams garlic powder
09 - Salt and freshly ground black pepper, to taste
10 - Tajin seasoning, for garnish (optional)

→ Dressing

11 - 120 grams mayonnaise
12 - 240 grams sour cream
13 - 60 millilitres extra virgin olive oil
14 - Juice and finely grated zest of 1 large fresh lime
15 - 8 grams chili powder
16 - 2 grams ground cumin
17 - 12 grams garlic powder
18 - Salt and freshly ground black pepper, to taste

# How to Make It:

01 - Preheat oven to 200°C. Arrange corn cobs on a baking tray and brush with melted butter. Season lightly with salt and pepper. Roast for 45 minutes, turning the cobs halfway through. Allow to cool, then slice kernels from cobs and set aside.
02 - Boil rotini pasta in generously salted water according to package instructions until al dente. Drain and rinse under cold running water to halt cooking.
03 - In a large mixing bowl, combine cooked pasta, roasted corn kernels, jalapeno, red onion, fresh parsley or cilantro, and queso fresco. Season with garlic powder, salt, and freshly ground black pepper.
04 - In a medium bowl, whisk together mayonnaise, sour cream, olive oil, lime juice and zest, chili powder, cumin, garlic powder, and additional salt and pepper to taste, until smooth.
05 - Pour the dressing over the pasta mixture. Gently toss until all components are evenly coated. Transfer to a serving dish.
06 - Sprinkle with Tajin seasoning if desired and serve chilled. Enjoy as a side or snack while fresh.
